On Saturday March 11th, an ace team of culinary students and Mr. Guida participated in the Black Culinary Alliance BCA Celebration of Diversity in Food
Service at the BCA’s 18th Annual Cultural Awareness Salute at the Marriott Marquis Hotel in Times Square. Our team was responsible for the intermezzo, which was a
green apple lemon thyme sorbet that was a hit of the night.
For the cocktail reception they made:
- Seared Tuna with Aioli Tapenade
- Duck with Shiitake Mushrooms on a Daikon Chip with White Truffle Oil
